I’m determined to make some homemade treats for lunch boxes this year and muffins are my ‘Go To’ recipe each week. I bake them and freeze them as soon as they are cooled a little. This way they don’t all disappear for afternoon tea (or Dad’s after dinner snacks!)
For lunch boxes I often make mini muffins or use my Tupperware muffin forms which are smaller than my standard muffin trays. This makes my mixture go a little further and they fit into the boxes better.
My favourite recipe comes from this Donna Hay cookbook. We love her blueberry muffins and often make the variation with raspberries and white chocolate. This week’s Apple Cinnamon Muffins are a variation so I thought I’d share.
Apple Cinnamon Muffin Recipe
- 2 apples, grated
- 2 teaspoons cinnamon
- 2 cups plain flour
- 2 teaspoons baking powder
- 3/4 cup brown sugar
- 2 eggs
- 1 cup sour cream
- 1/3 cup olive oil
Sift flour, sugar and baking powder into a large bowl.
Add the cinnamon and grated apple.
In a small bowl or jug whisk together the eggs, sour cream and oil.
Add the wet ingredients to the dry and stir together until just combined.
Bake in prepared muffin tin in moderate oven for 15 minutes or until brown.
