Apple Cakes

I got caught! {wry grin}
I served up morning tea to friends a couple of weeks ago
only to have Mummy S say…
“I love this cake! You must give me the recipe”
No problem, right?
Except… I cheated on that cake!
I used a… packet mix {gasp!}
I confessed and we all smiled about it
but I thought I’d share my Mum’s recipe
(and my cheat version 😉

Belgian Tea Cake

(not sure why it’s Belgian but anyway…)
  1. Cream 3 oz. butter and 3 oz. sugar (yep, old recipe in ounces)
  2. Add 1 egg and beat well
  3. Add 1/4 cup milk and 6 oz. sifted SR flour, alternately, folding them in with a wooden spoon
  4. Put into greased tin (recipe says “sandwich tin”, Mum always used round one about 20cm, but I usually use a spring form round one)
  5. Arrange slices of apple on top
  6. Mix 1 tspn sugar and 1 dessertspn cinnamon, and sprinkle on top
  7. Bake 15-20 mins in Moderate oven (about 180C)

My Cheat Version

  1. Mix up a vanilla cake mix according to the box instructions
  2. Stir through a small tin of pie apple
  3. Put it in the tin
  4. Sprinkle with a mixture of sugar and cinnamon (I just guess the amount – about a dessertspoon of each)
  5. Bake according the box instructions
  6. Serve to unsuspecting friends as homemade cake 😉

    That looks so-so yummy and the cheat version looks super fast to bake up. What type of apple do you use and how many apples? And do you serve it warm or cooled? Thanks!! (PS: I found your post on The Girl Creative 🙂

    Thanks Janis. I use a tin of pie apples. I have also just chopped up an apple and added that in the batter.
    Mum often served hers warm with butter, but cold is yummy too!
